The college I want to apply to (University of Nevada Reno) has two options on the application: either a SSN or a box you have to check if you don't have a SSN. I'm guessing I don't have one but I do have an ITIN. Would that work? Or should I check the box where it says I don't have one?

No. An ITIN is worthless for anything but reporting tax income.

ITIN is a for taxes, not college out of luck

You don't need one. Or, ask your high school to provide you with a number you can put down, that's what I did.
